W&H Marriage & Sons Ltd produce a comprehensive
range of superior quality bread and culinary flours. Marriages
use a mixture of traditional techniques and the latest technology
to produce premium flours that offer consistent result for
bakery customers. Marriages carefully select wheat's used to
ensure as much of protein in the flour as possible is naturally
occurring gluten, thereby reducing the need to add dried gluten
at the mill. This results in better quality protein converting
into better quality gluten on mixing, producing only top quality
breads.

Culinary Flour
A premium quality general purpose
white plain flour. Ideal for short pastry and biscuit type
products, traditional sponge and cake recipes, soda bread and
scone recipes.
Golden Crust
A very popular higher protein white
breadmaking flour. Ideal for yeast breadmaking in no time dough
processes (High Speed and ADD). Treated with ascorbic acid,
it can also be used in short bulk fermentation processes. Suitable
for tinned bread, oven bottom or sole baked crusty breads,
French sticks, rolls morning goods, puff pastry and soda bread.
Self Raising
A premium quality general purpose
white self raising flour. Ideal for all self raising flour
applications in scones, cake, muffins, sponge and soda bread.
Uppermost
A very white patent breadmaking flour
tailor made for long and short bulk fermentation processes.
Containing a high proportion of Canadian wheat, it is suitable
not only for tinned bread and oven bottom breads, but also
ciabatta French stocks and rolls.
Royale Canadian Brown
A premium quality , general
purpose brown breadmaking flour. This flour is roller milled
with large bran particles. Ideal for yeast breadmaking in no
time dough processes (High Speed and ADD). It is also an excellent
brown soda bread flour. Suitable for tin breads, oven bottom
or sole baked crusty bread, rolls and morning goods.
Strong Stoneground Wholemeal
A very popular
premium quality traditional stoneground wholemeal breadmaking
flour. This flour is 100% stoneground, delivering the natural
goodness of all the wheat grain. It is traditionally milled
on hundred year old horizontal French Burr stones to give the
flour "nutty" flavour. This blend has a high proportion
of Canadian wheat . Ideal for yeast breadmaking in no time
dough processes (High Speed and ADD), it can also be used in
soda bread recipes. Suitable for tin breads, oven bottom or
sole baked crusty bread, rolls and morning goods.
